This class is an introduction to slow smoked southern BBQ. Learn how to select the best cuts of meat, creating your own dry rubs and sauces, different smoking woods and techniques, and about safe food handling procedures. Learn how to prepare the four basic meat categories for competition: beef brisket, pork butt, pork ribs & chicken. Students can bring your own smoker (not required) and prepare to cook your own ribs & chicken. Class is taught by Big Daddy's Family BBQ competition team, pitmasters Kevin & Gina Shields, KCBS & PNWBA members & PNWBA certified judges. Materials fee of $50 payable to instructor day of class (includes all meat, rubs & charcoal). CEUs: .8
