TELOS - Culinary History of India

Delve into a culinary journey of Indian food, from antiquity to the modern age: the elements that make Indian cuisine a melting pot of indigenous and foreign influences. The course examines the history of Indian cuisine - the spices, the distinctive regional flavors, healing and medicinal food (Ayurveda), culinary refinements and extravagances of the Royal Courts and much more. The class concludes with a field trip integrating the students’ learnings.
