Buche de Noel Workshop
The Buche de Noel is a Christmas baking tradition in France. Its origins are unknown, but it first shows up at the beginning of the 19th century. Known as Yule Log Cake in America, the shape and decorations represent the fire log brought into the home for the winter. The base is a delicate sponge or Genoise chocolate cake, rolled and filled with a chocolate or vanilla mouse or cream and covered with a dark chocolate frosting. Traditionally, meringue mushrooms surround the cake, however, contemporary decorations can be as elaborate or simple as you wish. This workshop will break the elaborate Buche de Noel recipe down to simple components to make stunning cakes for the holidays. A list of ingredients and tools will be provided prior to the workshop.
