Nutrition and Inflammation   



This is a general public (non-credit) course on the inter-related topics of nutrition and inflammation with a brief introduction to vitamins and minerals in their most bioavailable forms (and in what foods you’ll find them in), reading food labels, the process of inflammation as it relates to common disease (why we experience it, symptoms, relationship to diet, even mood/gut relationships), how to play a preventive role in chronic inflammation, and common anti-inflammatory diets, foods, and supplements used to help prevent and alleviate chronic disease symptoms, and a brief introduction to nutrigenomics (nutrition and genes).
