|The Incredible Versatile Egg
By far the most versatile food we have is the “lowly” chicken egg. We will explore both savory and sweet applications. We will learn how to make the perfect over-easy egg, make an omelet bar and cook a delicate, fluffy omelet. On the sweet side, we’ll make a luscious chocolate mousse, rich vanilla ice cream, and its cooked cousin, Crème Brule. Students are requested to bring a boning and chef’s knife if they have them.
