|Sausage Making for the Home Cook
Sausage is one of the oldest processed foods in the world, and it is actually possible for the home cook to make their own with the right tools and techniques. We will make a bulk breakfast sausage, stuff Italian sausage into casings, and create a smooth emulsified Boudin. We’ll eat some in class and the students will be able take some of each home. Students are requested to bring a boning and chef’s knife if they have them.
