  • All About Tarts

    Chef Michele will teach you how to make delicious tarts, descended from the classic French fruit tart, using Pate Sucree. You'll learn how to prevent the notorious soggy crust, how to make a delicious filling and how to arrange your fruit on top. She'll show you different methods for glazing your fruit to keep it fresh. C'est magnifique!

  • Trendy Cream Tart: This trendy and delicious dessert is made with a shortcrust dough called Pate Sablee, which makes a crisp cookie-like crust. You've probably seen them floating around Pinterest in the shape of letters, numbers and shapes filled with delicious cream and decorated with fresh fruits and edible flowers. We will be creating a fun abstract shaped tart with cream filling decorated with in-season fruit.

  • Deep Dish Pizza: Learn the ins and outs of cast iron cooking as Chef Michele shows you how to create her signature deep dish pizza. You pick your toppings! You will also make a pizzeria-inspired salad with a homemade dressing, and authentic tiramisu dessert cups to end your meal. You'll receive recipes, prep packet, and the video recording of the class.   • Fall Gnocchi: Gnocchi are yummy little pillows of heaven made from potatoes. The Italian version of a pasta-like dumpling. We'll make classic gnocchi with a roasted red tomato basil sauce along with a seasonal veggie side dish. This is a versatile dish for any time of the year!   • Cooking Methods: Chicken: In this class we will be making an appetizer, main dish and a side. For our appetizer we will be making a jam and goat cheese tapenade to grace the top of our toasted crostini. Next we will prep our fall inspired salad with homemade vinaigrette and then move onto the star of our meal; pan-roasted chicken in a delicious wine sauce. Michele will also give you her recipe for skillet chocolate chip cookies, the perfect dessert to end any meal with. You'll receive class recipes, prep packet, and the video recording of the class.   • Cooking Methods: Steak: Cooking the perfect steak can be a challenge but not anymore! Chef Michele will teach you her method for cooking the perfect steak every time regardless if it's on the grill or in the oven. In this class we will be making grilled steak in a pan sauce, a seasonal side and chocolate mousse for dessert. Bring your appetite!   • Holiday Bread Making: The holiday season is the most popular time of year for baking and we are going to do just that! Chef Michele will teach you how to make Parker House Rolls, perfect for holiday dinner, Cheesy Biscuits, great for a casual holiday get together, and her favorite for holiday brunches, Popovers. You will leave class armed with three highly versatile breads perfect for the holiday season or anytime of the year. You'll receive class recipes, prep packet, and the video recording of the class.   • Holiday Cupcake Decorating: Join Chef Michele for this fun cupcake decorating class. In this class you will learn festive holiday cupcake designs. Chef Michele will teach you how to pipe on your cupcakes along with how to use fondant to make decorations. This class is great for all ages and skill levels.   • Candy Making for Gift Giving and Entertaining: Join Chef Michele as she teaches you how to make marshmallows, easy brittles, layered and enrobed candy bars and more! Students will also learn how to make ganache and nut butter fillings for candy bar layering.   • Cookie Exchange: Join Chef Michele as she teaches you her popular cookie recipes, perfect for fall and holiday cookie exchanges. You will learn to make several cookie batters including Chef Michele's no spread sugar cookie recipe, along with two types of icing. Then learn how to pipe festive decorations on cookies as well as how to glaze cookies. Chef Michele will finish the class up with how to package your cookies for gift giving or for cookie exchanging!
