This classroom experience is designed to expose participants to the critical factors and decisions in capturing quality images, including choice of subject, exposure, sharpness, composition, lighting, color and B&W, and equipment. Also included will be exposure to the processing of digital images using popular computer software.
Note: The course meets on two consecutive days. Participants should be familiar with their camera manual and its operation.

The Mediterranean diet has been hailed as the best diet for overall health. This course will provide building blocks for eating simply, healthfully, mindfully and seasonally. Class members will learn to prepare traditional recipes using fresh produce, herbs, and spices. It is a hands-on class, where we will chop, season, and learn authentic recipes from Cyprus, Greece, Turkey, and Lebanon.
Note: This course has a $20 materials fee to be collected by the instructor at the first class.

This course will highlight our understanding of the aging process with emphasis on cognitive decline and Alzheimer's disease. Participants will take a virtual biking trip across Europe from the comfort of their own chair, at their own pace - even if that is just sitting still. We will discuss willpower, health behavior, the connections between pleasure and happiness, and the role of each in a good life. Finally, we will discuss the role of genetics and epigenetics in positive aging.
NOTE: This course meets on five consecutive days.
