Class Overview
Learn the art of making fancy and delicious wedding and celebration cakes!
Wedding cakes are one of the celebrated focal points of many weddings and celebrations. Learn to make a cake that will shine and delight all celebrants in presentation and flavor. Gain all the basic skills of wedding cake making, from designing and assembling to baking and decorating.
Each student will design and create a two-tiered wedding or celebration cake using appropriate production methods for the cake, filling, icing, and decorative components. The focus will be on correct methodologies, composition, aesthetics, flavor pairings, structure, timely production, and food safety and sanitation.
Supply List
- Notepad and pen or pencil
- All baking tools will be provided (you can bring personal tools such as spatulas and piping tips if you’d like, but that is not necessary)
Learning Objectives
- Choose and produce a good cake base or sponge for a tiered cake
- Make fillings and icings used in celebration cake production
- Understand and demonstrate the correct usage and storage of commercial rolled fondant icing and gum paste
- Assemble, ice, and decorate a stacked-tier cake with proper internal support
- Make basic decorations with royal icing, gumpaste, and/or pastillage
