 Refunds & Withdrawals 
In-Person Classes - Withdrawal/refund requests must be made by phone or email prior to the start of the class to receive a 100 percent refund. No refunds will be made after that time. Unexplained absences from class without prior communication to the instructor will result in immediate withdrawal and the student will not be refunded.
Online/Zoom Classes - Withdrawal/refund requests must be made by phone or email 24 hours or more from the start of the class to receive a 100 percent refund. For the security of the virtual classroom, refunds for online classes will not be authorized after the Zoom link has been sent.
All Classes - Full refunds will be made if Centralia College cancels the class.

 Important - Zoom Links 
The CE office will email Zoom links 24 hours before the class starts. Please check your spam folder before requesting a new link. If you have not received the Zoom link and the online class is fewer than 24 hours away, contact the CE office immediately at 360-623-8940. If you do not contact the CE office about the missing Zoom link before the class starts, a refund will not be provided.

 
  • Apple Pie From Scratch
  • Fall into the season with a homemade pie. In this fun interactive online class, you'll learn a technique for making a pie crust from scratch and we'll use 100% butter. We'll also prepare apple pie filling from scratch as well. We'll then assemble a beautiful double-crusted apple pie. While the apple pie is baking, we'll use the leftover crust to make hand pies. While the hand pies are baking, we will talk about how to store and keep the pie for Thanksgiving.

  • Put a little spice in your life, or at least in your food! In this class we will discuss herbs and spices that can enhance the flavor of your favorite dishes, as well as how to make your own seasoning blends. We will cover Asian, Mexican, Indian, Mediterranean and other region blends like Curry, Graham Marsala, etc. as well as types of Peppers & Salt and an intro to culinary herbs. Includes a handout, herb & spice cooking chart, recipes, spice samples, and eBook.

  • Dim Sum is a popular style of Cantonese cuisines that include small dishes that highlight different flavor profiles and cooking techniques. In this online interactive class, we will make cha shu chicken pastry, braised chicken with mushrooms, and vegetables with ginger garlic sauce.

  • Mexican Tamales
  • Nothing can beat homemade tamales. They are delicious and fun to make. Particularly during the holiday season, friends and family gather to assemble tamales. It is a magical moment where we create a memory of the tamales experience. We will be making chicken mole tamales and vegan black bean chipotle tamales. We'll also make Mexican Manchamanteles made from scratch.

  • Moroccan Pastilla or Bastilla is the famous chicken pie of Morocco. A light crispy warqa pastry or phyllo dough filled with delicious shredded chicken, egg stuffing, and sweet orange blossom almond. This sophisticated, sweet, and savory pie will be a showstopper for any occasion or just a simple day with friends and family. While the pastilla is baking, we will make Moroccan herbal mint tea.

  • Flavors of Asia Cooking Series
  • Spend your Thursday evening in this fun online cooking class and learn different techniques to make Asian food at home. Learn about different cultures each week and learn essential techniques, including secret ingredients that make each cuisine appealing and unique. In the first week, we'll make Korean bibimbap with chicken bulgogi and vegetable side dishes. In the second week, we'll make Vietnamese chicken noodle soup (pho) and fresh spring rolls. In the last week, we'll make Thai coconut chicken soup and pad Thai with chicken.
