One of the earliest cookbooks in recorded Western history, De re Coquinaria (On the Subject of Cooking), is based on the recipes by Marcus Gavius Apicius, a wealthy Roman merchant and connoisseur gourmand who lived during the reign of Emperor Tiberius Caesar Augustus (14 AD – 37 AD). Apicius, famous for his love of food, often featured exotic spices from faraway India – cardamom, cumin seed, coriander seed, fennel, Indian spikenard, and saffron – in many dishes. Our Roman SMART Cuisine™ recipes, based on Apicius’s writings, demonstrate the preparation of delectable dishes that require minimal cooking skills and for very affordable cost per serving.
Note: All SMART Cuisine™ cooking is done using an electric skillet.
Prior to the class, you can download the recipes, shop for, and prep the ingredients, set up your electrical skillet, and you’re ready to follow the live ZOOM demonstration and cook your own dishes. Wholesome, delicious, and comforting meal in 15 minutes of cooking time. Guaranteed. (Term 1 Class)
