Arrowleaf or balsamroot is the bright yellow flower that covers Spokane’s hills and woodland every spring. We will use wet on wet, loose brush strokes, scumbling, and soft blends to capture this lovely wildflower.

This course takes a look at the history of this unique spirit in order to reveal insights into a web of connections that span across time (Arab scholars in medieval Baghdad to modern global multinational corporations), geography (from the Highlands of Scotland to the cornfields of Kentucky), and social mores (from teetotalers pushing for Prohibition to the speakeasies that thwarted it!). Take an eclectic journey across time and space with a dram of an exquisite beverage.

Mosaics is the art of placing broken glass or tile into patterns and compositions. Mosaics has developed into quite an art form today, used in everything from small artwork to large scale public pieces. In this class, we will be creating concrete stepping stone mosaics. We will cover what materials to use, and how to go about designing and creating your mosaic piece. Students will also be pouring their own concrete stepping stone for their mosaic. Students are encouraged to pack or prepare to leave campus to purchase a lunch.
Note: All supplies are provided. Students are encouraged to pack a lunch; a few stores are near if unable to pack a lunch and ordering online for delivery/pick up is another option.

Learn the history of sourdough! Students will receive a live culture and the ingredients to "feed" the culture and they do so as they listen to how to care for and store this culture. Students will also receive a handout that includes a recipe for Sourdough Waffles. They will observe the preparation of waffle batter and waffles and are given the opportunity to taste 2-3 versions depending on the flour used. CLASS IS FULL. While learning the history of sourdough, students will observe the preparation, proofing and baking using two variations of flours. Students will be given the opportunity to taste fresh sourdough bread in addition to a bread that uses sourdough for flavor not for leavening. Sourdough 101: Basics is a pre-requisite to enroll.

Plate tectonics is considered the unifying theory of the Earth sciences. Although a relatively young theory having been introduced in the 1960s, a true revolution or paradigm shift in scientific thinking about the origins of the Earth and evolution resulted from plate tectonic theory. A combination of earlier theories such as continental drift and seafloor spreading, plate tectonics today integrates and explains an exceptionally wide range of Earth features and processes ultimately addressing the truly dynamic nature of planet Earth. Topics discussed in this class will include the history of plate tectonic theory, tectonic plates and rocks, tectonic processes and features, plate tectonic case studies, and supercontinent formation and breakup.
